The Dairy Science World Series Technical Session on Ice-Cream will be held in Melbourne from 17-19 October 2022. 

Registrations:

 Course program: 

Day 1: 

  • 9:00-10:20am – Introduction; ice-cream and related products: mix composition and formulations
  • 10:20-10:40am – Break
  • 10:40am-12pm – Mix processing (pasteurisation, homogenisation, ageing)
  • 12:00-1:00pm – Lunch 
  • 1:00-2:30pm – The freezing process, theoretical aspects; ice recrystallisation during storage and distribution
  • 2:30-2:50pm – Break
  • 2:50-4:30pm – Ice-cream freezing equipment and overrun calculations; mix calculations
 

Day 2: 

  • 9:00-10:20am – Milk production and composition; milk products; mix ingredients: fat and milk solids-not-fat
  • 10:20-10:40am – Break
  • 10:40am-12pm – Sugars and stabilisers
  • 12:00-1:00pm – Lunch 
  • 1:00-2:40pm – Emulsifiers; ice-cream flavours: vanilla, chocolate, inclusions and ripples, etc.
  • 2:40-3:00pm – Break
  • 3:00-4:30pm – Ice-cream flavour, structure and texture defects; ice-cream evaluation session
 

Day 3: 

  • 9:00-10:20am – Dairy microbiology and food safety; plant sanitation; post-pasteurisation contamination
  • 10:20-10:40am – Break
  • 10:40am-12pm – Ice-cream structure; stabiliser and emulsifier functionality
  • 12:00-1:00pm – Lunch 
  • 1:00-2:40pm – Ice-cream novelty/impulse product manufacture; gelato and other frozen desserts
  • 2:40-3:00pm – Break
  • 3:00-4:30pm – Product-development trends; general discussion
