In June, DIAA WA will be hosting a three-day, hands-on Science of Cheesemaking Workshop with master cheesemakers Neil Willman. Topics covered will include milk quality and microbiology, milk standardisation and pasteurisation, additives, starter cultures and coagulants, syneresis, curds and whey control, salting, cheese maturation and yields and cheese composition control.
When: 6-8 June 2018
Where: Brownes Dairy Factory, 58 Ommaney Road, Brunswick Junction, WA
Cost: The workshop is free for DIAA members and $200 for non-members.
About the presenter
Neil Willman has lectured on cheese manufacturing at the Gilbert Chandler Institute of Dairy Technology in Werribee for many years and now runs the New Zealand Cheesemaking School. Neil is a master cheesemaker and master cheese grader, the DIAA's Australian and Victorian Dairy Product Compeition cheif judge and former Australian Grand Dairy Awards chief judge. Neil has trained dozens of Australian and New Zealand’s cheesemakers, cheese judges, food media and cheese lovers over the past 30 years.
After you have registered for the event, please complete the online Brownes Dairy Factory induction before you come onsite. You will need to wear safety boots when you attend the course.
