The Surface Deterioration of Cold Stored Butter

The absorbed taints on the surface of 56 lb. cubes of cold stored butter, wrapped in vegetable parchment and packed in cardboard cartons were found to originate from a component of the cardboard.

Control of the tainting substances was effected by use of impervious laminates and by coating the inner liner of the carton with an impervious material.
