The Australian Dairy Industry produces approximately 250 million gallons of cheese and casein whey annually. Most of this whey is at present discarded and so lost as a source of nutrition.

A review has been made of the various methods available for utilising whey, and those factors likely to affect their adoption to Australian conditions are discussed.
